Why is Beluga caviar the most expensive?
Beluga sturgeon take 10 to 25 years to reach maturity before their first harvest. The roe is the largest of any sturgeon species — typically 3.1mm or above — with a silky, creamy texture and extraordinarily delicate flavour that no other caviar matches. Scarcity, the length of time required to farm the fish, and the quality of the roe all drive the premium price.
What does Royal Beluga caviar taste like?
Royal Beluga has the most delicate and subtle flavour of any sturgeon caviar. Large steel-grey to black pearls burst softly on the palate, releasing a rich, buttery, creamy taste with a long, clean finish. It is less briny than Oscietra or Baerii — the flavour is gentle, almost ethereal, and lingers for minutes after tasting.
How much Royal Beluga caviar per person?

How do I serve Royal Beluga caviar?
Place the tin on a bed of crushed ice. Use a mother-of-pearl spoon — never metal, which reacts with the caviar and ruins the flavour. Serve directly from the tin with warm blinis and crème fraîche, or taste neat on the back of your hand using the traditional bump method.
Does Royal Beluga caviar go off?
Unopened, Royal Beluga keeps for up to 90 days from dispatch when stored at -3°C to +2°C. Once opened, consume within 24 to 48 hours. Never freeze caviar — freezing destroys the bead structure entirely.
