Oscietra is where caviar becomes genuinely complex. The first impression is of the sea — clean and saline — but within moments a deep, nutty quality asserts itself, reminiscent of walnut or hazelnut with an underlying richness that is distinctly its own. The grain is larger and firmer than Baerii, giving each egg a more pronounced pop and a longer, more layered finish.
