Oscietra caviar — also spelled Osetra, Ossetra, or Osietra — is produced from the Russian sturgeon, Acipenser gueldenstaedtii. Where Does Oscietra Caviar Come From?
Our Oscietra is sourced from accredited aquaculture farms in Bulgaria, Poland, Italy, and China — all operating under EU or equivalent food safety standards with full traceability. Supplied with UK CITES documentation.
The Russian sturgeon takes around 8–12 years to reach harvest maturity — roughly half the time of a Beluga. This is one reason Oscietra can be produced at greater scale without sacrificing quality, and why it represents better value gram for gram than Beluga.
